These dishes require a lot of effort and patience, the chef must be of the highest standard to be able to fulfil the expectations of the discerning diner. Without giving the secret away, we will give you some idea how the mussalam is prepared. A whole spring chicken or joint of a young lamb is marinated in a secret massalam sauce for 20 hours. The chicken or lamb is stuffed with spiced minced lamb and fresh herbs, and is then sprinkled with massala. Meanwhile the clay oven is heated with wood charcoal to a specific temperature. The meat is left to barbecue for a few hours, keeping in mind the time of your arrival, so we can serve you the dish piping hot. Along with the masalam, you are served two vegetable dishes of your choice, massala sauce, tandoori nan or pilau rice, together with salad and a tray of condiments.
